Jalapeno Cornbread
1—jalapeno pepper chopped
1/2 small onion chopped
1 tablespoon butter
1– 6 oz package of cornbread mix
Follow the instructions on the cornbread mix, then add the butter, onion , and jalapeno pepper.
Pour in greased baking dish. Bake at 425 until golden brown.

Sloppy Joe Squares
1 lb lean ground beef
1 can sloppy joe sauce
2 cans crescent dinner rolls
2 cups shredded cheddar cheese
Heat oven to 350. cook beef over medium heat stirring occasionally, until thoroughly cooked.  Stir in sauce. Heat to boiling, stirring occasionally.

Unroll 1 can of the dough: place in ungreased 13 x 9 inch glass baking dish. Press in bottom and 1/2 inch up sides of dish. Spread beef mixture over dough; sprinkle with cheese. Unroll second can of dough; place over cheese. Sprinkle  lightly with cheese.
Bake 30 to 35 minutes or until mixture is bubbly and dough is golden brown. Cut into squares to serve

Alfredo Chicken Pie

2 cups chopped broccoli
1 -1/2 cups sliced fresh carrots
1 cup chopped onion
1 cup sliced celery
2 cups cubed cooked chicken
1  - 16oz jar alfredo sauce
1 cup biscuit/baking mix
1/3 cup milk
1/4 teaspoon garlic powder

In a large skillet, saute the broccoli, carrots, celery, and onion in a little oil until crisp-tender.  Remove from heat stir in chicken, and alfredo sauce. transfer to a lightly greased baking dish. In a small bowl, combine the biscuit baking mix, milk and garlic until moistened. Drop by rounded tablespoonfuls onto chicken mixture. Bake uncovered at 350 until top is golden brown. Can add a little cheese on top if you want.

I made this dish tonight for supper and it was sooo good.  



Crock Pot Beans

3 lbs of pork & beans
1 chopped onion
1 lb browned hamburger
1 lb diced kielbasa
1 pkg sloppy joe mix
½ cup ketchup
½ cup brown sugar
2 teaspoons mustard
2 teaspoons Worcestershire sauce
½ cup BBQ sauce

Mix all ingredients together and pour into
Crock pot. Cook in crock pot on low for
Approximately 4 hours




Venison Summer Sausage
2 lbs ground venison
¼ teaspoon salt
¼ teaspoon pepper
½ teaspoon garlic powder
2 tablespoons Morton’s Tender Quick
1 tablespoon whole mustard seed
1 tablespoon liquid smoke
1 cup water
Mix all ingredients well and shape into 1 lb
logs. Roll each log in coarse black pepper, then
wrap each log in aluminum foil and refrigerate
for 24 hours. After 24 hours remove foil and
bake in pan with rack for 1 to 1 ½ hours at 350
degrees. After the sausage cools refrigerate
overnight allowing all flavors to blend well.
Slice the logs into thin slices and serve. This
sausage can be frozen.


Broccoli Salad
2 bunches broccoli
1 lb of fried, crumbled bacon
2 cups or more shredded cheese
1 chopped red onion
Combine ingredients and place in a large bowl. Sprinkle 2 teaspoon vinegar over mixture and wait 5 minutes. Sprinkle ½ cup sugar over mixture and wait 5 minutes. Stir in 8 oz of mayonnaise and mix well. Serve cold

Bake 30 to 35 minutes until mixture is bubbly and dough is golden brown. Cut into squares to serve.





Daniel’s Smoked Sausage Dish

Slice red potatoes enough to cover the bottom of the dish. Chop ½ of a onion, red & green bell peppers also chopped, place on top of red potatoes, now slices of beef smoked sausage, add some butter, salt, pepper.
Cover and bake at 425 for about 45 minutes or until potatoes are done. Then layer some cheese on top and let melt. Then stir all together.

Got this receipe from a friend at work. Made it one night for my Husband and it is now a favorite.






Mexican Casserole II

1 pound ground beef
1 can chili beans
1 can re-tel tomatoes
1 10-12 ounce bag tortilla chips, crushed
1 small onion, chopped
2 cups shredded cheddar cheese
1 package taco seasoning
1 can cream of chicken soup
1/4 cup water

Preheat oven to 350. Brown ground beef and drain off fat. Stir in beans, tomatoes, onion, taco seasoning, soup and water. simmer over medium low heat until everything is well combined and heated through.
In a greased 9x13 casserole dish layer crushed tortilla chips, meat mixture and cheese, crushed tortilla chips, meature and cheese bake until hot and bubbly. about 20 to 30 minutes

Quick John

1 lb ground beef
1 medium onion (optional)
1 can cream of mushroom soup
1 can water
1 can biscuits

Brown ground beef and onions, drain fat. Add soup and water bring to a boil. Remove from heat,
top with biscuits. Bake at 350 till brown 30 to 45 minutes





Cheesy Beef Pot Pie

1 lb browned ground beef
1  pkg (16 oz) frozen mixed vegetables thawed
1 cup cubed velveeta cheese
1 can cream of mushroom soup
1 can (8oz) refrigerated crescent dinner rolls

Combine first 4 ingredients in 13 x 9 inch baking dish. Unroll dinner rolls and place over mixture. Bake 20 to 25 min or until crust is golden brown.

You can also cube some potatoes and boil and drain them and add to the first 4 ingredients.
This recipe was so easy and the cheese makes it even better. My husband doesn't like pot pies but he liked this one. He even told me I could make it again. Also he went back for seconds. This recipe is a keeper



Smoke Sausage & Potato Stir Fry

4 med potatoes
1 small squash
1 small onion
1/2 bell pepper
1 pkg smoke sausage

Put a little oil in bottom of frying pan and cut up your onion and bell pepper ,then clean potatoes and squash and slice into pan. slice smoke sausage and add to pan with salt and pepper. Now cover and cook over med heat and stir occasionally until  potatoes are tender.

I have added celery if I have some that I need to use. This is a one dish meal that doesn't take very long to put together. Enjoy really enjoy it.



Poppy Seed Chicken Casserole

5 or 6 skinless, boneless chicken breast halves
2/3 cup butter, melter
1 1/4 sleeves buttery round crackers, crushed
1 1/4 teaspoons poppy seeds, or more if desired
1  (8 oz) containers sour cream
1 1/4 (10.75 oz) cans condensed cream of chicken soup
2 -2/3 cups shredded cheddar cheese

Boil chicken breast halves until the chicken breast are no longer pink in the center. drain the water, then shred the chicken (I did not shred mine I just chunked it up).

Preheat an oven to 350.  Combine the butter, crackers and poppy seeds in a bowl, set aside.

Blend the sour cream and cream of chicken soup in a bowl, pour half of the soup mixture into a 9x9 inch baking dish. Add the shredded chicken, then pour the remaining half of the soup mixture on top. sprinkle with cheddar cheese, then top with the cracker mixture.

Bake in the preheated oven until cheese has melted and the sauce is bubbly. 25 to 30 minutes.

Mushroom Smothered Beef Burgers

1 can cream of mushroom soup
1 pound ground beef
1/3 cup italian seasoned dry bread crumbs
1 small onion finely chopped (about 1/4  cup)
1 egg beaten
1tablespoon worcestershire sauce
1 1/2 cups sliced mushrooms (optional)
4 tablespoons water

Thoroughly mix 1/4 cup soup, beef, bread crumbs, onion and egg in a large bowl. Shape the beef mixture firmly into 4 (1/2 inch thick) burgers.
cook until they are well browned on both sides and well done. pour off any fat.
add the remaining soup. Worestershire , water and mushrooms (optional) to the skillet and heat to a boil. Reduce the heat to low. Cover and simmer for 5 minutes.

This recipe turned out really good. I added some steamed green beans and boiled red potatoes









Mexicorn Salad

2 cans mexicorn drained
1 chopped bell pepper
1/2 red onion chopped
1 cup shredded cheese
1/2 to cup of mayo to taste
Serve over Chilli Cheese Fritos

My son-in-law just loves this recipe.

Stroganoff Bake

1 lb ground beef
1 pkg lipton onion soup mix
1 can cream of mushroom
2 cups of shredded cheese
Milk to desired consistency (about a half a can)
1 loaf French bread
Cook Ground Beef, drain, put beef back into the pan then add cream of mushroom, milk, lipton onion soup mix. Cook over medium heat for about 5-10 minutes. Cut French bread loaf in half and place both halves on a cookie sheet face up then spread mixture from pan onto your bread and top with cheese and bake until cheese is melted.

Swedish Meat Balls

1 bag frozen meatballs (original flavor not
Italian style)
1 16 oz container sour cream
1 package lipton onion soup mix
1 can cream of mushroom soup
1 can of milk
Combine all ingredients in a crock pot and cook
Until meatballs are heated through and
Through.

Chicken Enchiladas

One whole Chicken                       Regular Onion
2 - cans cream of mushroom soup
Bell Pepper                                   Green Onions
Flour Enchiladas                            8 oz sour cream
Picante Sauce                                Grated Cheese

Boil chicken and cut into cubes
Sautee onions and green peppers. (I usually use equal amounts of onions and peppers.)
Mix chicken with 8 oz sour cream, 1 can cream of mushroom soup and sauteed onions and
peppers. Put 2 or 3 heaping tablespoons of mixture on a flour enchilada and roll. Place
in oven proof dish or pan put 2nd can of cream of mushroom soup on top of rolled enchiladas.
Top with grated cheese, picante sauce and chopped green onions.

Cover and put in oven for 15 to 20 minutes until hot and cheese melts. Oven at 325 to 350
depending on your oven.
