Pecan Pie Muffins



Pecan Pie Muffins

1 cup packed light brown sugar
1/2 cups all purpose flour
1 cup chopped pecans
2/3 cup butter
1 whole eggs beaten

Preheat oven 350. grease your muffin pan. In a medium bowl, stir together brown sugar, flour and pecans. In another bowl beat butter and eggs together until smooth. Stir into the dry ingredients just until combined. Spoon the batter into the prepared muffin cups. Cups should be about 2/3  full. Bake 20 to 25 minutes.

1 pound ground beef
1 can chili beans
1 can re-tel tomatoes
1 10-12 ounce bag tortilla chips, crushed
1 small onion, chopped
2 cups shredded cheddar cheese
1 package taco seasoning
1 can cream of chicken soup
1/4 cup water

Preheat oven to 350. Brown ground beef and drain off fat. Stir in beans, tomatoes, onion, taco seasoning, soup and water. simmer over medium low heat until everything is well combined and heated through.
In a greased 9x13 casserole dish layer crushed tortilla chips, meat mixture and cheese, crushed tortilla chips, meature and cheese bake until hot and bubbly. about 20 to 30 minutes.

Smoke Sausage Chili



Smoke Sausage Chili

1 pound smoked Sausage or Polish Sausage, halved and sliced
2 cans diced tomatoes, undrained
1 can chili with beans
1 can whole kernel corn, drained
1 can (2 1/4 oz) sliced ripe olives, drained (opational)

In a skillet coated with cooking spray, saute smoke until lightly browned. Put in pot and add all other ingredients. Bring to a boil . Reduce heat; simmer, uncovered, for 4-5 minutes or until heated through.

I put in a crockpot and turn to high and when all is nice and hot serve.

Chocolate Caramel Cookies



Chocolate Caramel Cookies

1 pkg devils food cake mix
1/4 cup water
1 egg
3 tablespoon oil
38 Rolo candies
Chopped hazelnuts (opational)

Combine cake mix, water, egg and oil in a large bowl. Roll rounded teaspoonfuls of dough into balls. Press a candy into each; reshape balls. Dip tops in hazelnuts.

Place 2 inchs apart on ungreased baking sheets. Bake at 350 for 8-10 minutes or until tops are cracked. Cool for 2 minutes before removing from pans to wire racks.

If you like caramel these are the cookies for you.

Cheddar Dip




Cheddar Dip

16 oz sour cream
1 package Ranch Dressing Mix
3 oz bacon bits (get the bag not the jar)
1 cup shredded cheddar cheese

Mix together and refrigerate 24 hours, Serve with chips or veggies
