Hummingbird Cake



Hummingbird Cake

1 - yellow cake mix
1 - (8 Oz) can crushed pineapple packed in juice, undrained
1 - cup mashed bananas( about 2 or 3)
1/2 cup water
1/2 cup vegetable oil
3 large eggs
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1 can cream cheese frosting
1/2 cup chopped pecans (optional)

Mix cake mix, pineapple and its juice, bananas, water, oil, eggs, vanilla, and cinnamon in a large mixing bowl. Beat with an electric mixer on low speed until all is mixed well.
Bake in two greased and floured round cake pans. Bake at 350 until done.  turn out of pans on to cooling rack. once it is cool frost first layer and then place second layer on top and frost top and sides.  You can put pecans on now or leave off.

This is a very moist cake.

Coupon Shopping and Price Matching

I never really thought of myself has a coupon shopper. I have done my fair share of price matching, but didn't do much with the coupons. Well! My friend Shelia has been trying to get me to start using coupon, so I went shopping with her over the weekend. I had a great time watching the money that I was saving. Well Shelia I am hooked. I am going to try harder at the coupons.
I brought around $30 in groceries and only paid $14 after price matching and using coupons. just look at what I brought.

Butterfinger Freeze Dish



Butterfinger Freeze Dish

3 cups graham cracker crumbs
1/2 cup butter, soft
1 cup cold milk
1 package (3.4 oz) instant vanilla pudding mix
1/2 gallon butter pecan ice cream softened
1 - 8 oz carton of cool whip softened
2 to 3  butterfinger candy bars crumbled

In a large bowl, combine the graham cracker crumbs and butter until crumbly. Using 3/4 of the mixture spread and pat  into ungreased 13inch x 9inch dish. In a large bowl, using hand mixturer combine milk and instant pudding until thickened. Now add the softened ice cream slowly until all is mixed together and pour into dish over graham cracker crumbs.  Spread the cool whip on top of that. Crumble the left over graham cracker crumbs and the crumbled candy bars on top. Now cover and place in freezer for at least 2 hours or until frozen.

This is a great summer time treat.

If I were rich I think I would cook all the time. I love to try new recipes and make up my own. I do like the simple recipes that are inexpensive to make. My budget can only take so much cooking, along with my weight. But I do love to put new recipes in front of my family.

Peach Bundt Cake with Peach Syrup

Cake Ingredients:
1 - yellow cake mix
1 - cup of butter
1 - cup of sour cream
1  - teaspoon vanilla
4 - eggs
1 - 15 oz can peaches in heavy syrup

Syrup Ingredients:
Juice from can peaches
unused  peaches
1/2 cup sugar
1/2 cup chopped pecans (optional)

Using hand mixer combine all cake ingredients but peaches together. Grease and lightly flour inside of bundt pan. pour 1/2 of cake mixture in pan. Cut up all the peaches but about 3 on top of cake mixture. Now pour the rest of the cake mixture over peaches. Bake at 350 until knife will go through cake and come out clean.

remove cake from bundt pan.  Puree the unused peaches and all with other ingredients in a small pan and bring to a boil. cook until you have a syrup like substance. now pour over cake slowly and give cake time to soak the syrup in.

this is a very moist cake and it is not to sweet but just right. My family loves it and I even took it to the office and my co-workers loved it also.
