Egg Casserole



Egg Casserole
12 eggs
1/2 cup chopped onions
1/2 cup chopped Bell Pepper
2 tablespoons sour cream
2 cup shedded colby cheese
One small Tomato Chopped
1/4 cup milk
6 ounces smoked sausage sliced and slices halfed

combine all ingredients except 1 cup of the cheese  in large bowl. Spray a frying pan and pour mixture in and scamble until almost done then transfer to baking dish and sprinkle the remaining cheese on top and bake at 350 until cheese is melted (about 15 minutes)

I have made this for the office and everyone loved it. I have also made it at home for dinner and it was a hit also.

Cheesy Beef Pot Pie



Cheesy Beef Pot Pie

1 lb browned ground beef
1  pkg (16 oz) frozen mixed vegetables thawed
1 cup cubed velveeta cheese
1 can cream of mushroom soup
1 can (8oz) refrigerated crescent dinner rolls

Combine first 4 ingredients in 13 x 9 inch baking dish. Unroll dinner rolls and place over mixture. Bake 20 to 25 min or until crust is golden brown.

You can also cube some potatoes and boil and drain them and add to the first 4 ingredients.
This recipe was so easy and the cheese makes it even better. My husband doesn't like pot pies but he liked this one. He even told me I could make it again. Also he went back for seconds. This recipe is a keeper.

Triple Chocolate Cake



Triple Chocolate Cake

1 package chocolate cake mix
1 package (3.9 ounce) instant chocolate pudding mix
4 eggs
1 cup (8 oz) sour cream
3/4 cup water
1/4 cup oil
4 ounces semisweet chocolate chips
1 can chocolate frosting

Combine first 7 ingredients until well mixed. transfer into two greased and floured 9 in round baking pans.
Bake at 350 for 28 to 32 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely. Once cooled frost with chocolate frosting.

(optional) You can take a handful of the remaining chocolate chips and place them in a ziplock bag and place in the microwave and heat until melted. Cut a tiny hole in one bottom corner and squeeze the melted chocolate on top of cake.

My family couldn't wait to cut into this cake, but it was worth the wait. This cake is so moist and rich. If you like chocolate cake don't miss this one.

Smoke Sausage & Potato Stir Fry


Smoke Sausage & Potato Stir Fry

4 med potatoes
1 small squash
1 small onion
1/2 bell pepper
1 pkg smoke sausage

Put a little oil in bottom of frying pan and cut up your onion and bell pepper ,then clean potatoes and squash and slice into pan. slice smoke sausage and add to pan with salt and pepper. Now cover and cook over med heat and stir occasionally until  potatoes are tender.

I have added celery if I have some that I need to use. This is a one dish meal that doesn't take very long to put together. Enjoy really enjoy it.
