Main Dishes

Quick John

1 lb ground beef
1 medium onion (optional)
1 can cream of mushroom soup
1 can water
1 can biscuits

Brown ground beef and onions, drain fat. Add soup and water bring to a boil. Remove from heat,
top with biscuits. Bake at 350 till brown 30 to 45 minutes

Main Dishes

Broccoli - Rice Casserole


1 - 10 oz pkg frozen broccoli
1/2 cup  chopped onion
1/2 cup butter
1 1/3 cups cooked rice
1 - 8 oz jar cheese whiz
1 - cab cream of mushroom soup

Combine broccoli & onion and boil as directions on broccoli package. Drain off water. Combine
broccoli and rice with remaining ingredients. Pour into a greased shallow 2 qt. casserole. Bake
at 350 about 30 minutes. Makes 6 to 8 servings.

Mexican Casserole

1 lb ground beef
1 can rotel tomatoes
1 onion chopped
1 bag nacho tortilla chips
1 can ranch style beans
8 oz shredded cheese

Brown ground beef and onion in large skillet. Add tomatoes, beans & bring to boil. Put layer of chips
then layer of ground beef mix, layer of cheese, repeat layers. Top with cheese bake at 350 until it
bubbles and cheese is melted

Coconut Pecan Cake

1 yellow or chocolate cake mix
3/4 cup water
3/4 cup oil
4 eggs
1 can coconut pecan frosting

Combine above ingredients and bake in a bundt pan at 350  I start checking this cake after 35 minutes due to different ovens bake differently. It is done when you can stick a knive in it and it comes out clean. I remove it from bundt pan just as soon as I take it out of the oven.

Baby Food Cake

1 butter flavor cake mix
1 tsp cinnamon
2 jars baby food fruit
1 cup oil
1 tsp vanilla
3 eggs
1 cup chopped pecans (opational)

Mix all ingredients. Bake in bundt pan at 350 until done about 30 to 35 minutes.

Desserts

Easy Dump Cake

1 can (21 oz) cherry pie filling
1 can (8 0z) crushed pineapple undrained
1 yellow cake mix
1/2 cup margarine melted

Heat oven to 350 drgrees. Spread pie filling and pineapple in ungreased a (13x9x2) pan. Stir together cake mix (dry) and margarine in large bowl until crumbly. Sprinkle evenly over fruit. Bake 35 to 40 minutes or until brown at 350

German Chocolate Upside Down Cake

German Chocolate Upside Down Cake

1 cup chopped nuts
1 1/2 cup coconut
1 german chocolate cake mix
1 stick butter, softened
1 box powdered sugar
1 (8oz) cream cheese softened

Grease a 9x13 inch cake pan. sprinkle coconut and nuts over bottom of pan to cover it. Mix cake mix as directed. Pour over nuts and coconut. Mix powdered sugar, cream cheese and butter. Spoon evenly over cake mix mixture. Bake at 325 for 50 to 60 minutes. Serve from pan.

Funfetti Cookies

Funfetti Cookies

1 Funfetti cake mix
1/3 cup oil
2 eggs
1/2 can Funfetti vanilla frosting
Combine cake mix, oil and eggs, stir with spoon until thoroughly moistened. shape dough into 1 inch balls, place 2 inches apart on ungreased cookie sheet, with bottom of glass cipped in flour flatten to 1/4 inch thickness. Bake at 375 for 6 to 8 minutes or until edges are light golden brown. Cool and spread frosting over cookies and sprinkle with candy bits.

1 devils food cake mix
2 eggs
1 tsp vanilla
1 tbs water
1/2 cup shortening

Mix above ingredients together roll into 1" balls, Roll balls in powered sugar, bake at 375 for about 10 minutes. These are great.

Peanut Butter Fudge Bars



Peanut Butter Fudge Bars

1 Butter Recipe Cake Mix
1 Cup crunchy peanut butter
1/3 cup water
1 egg
1 can chocolate fudge frosting
1/2 cup crunchy peanut butter
1 cup mm's

Heat oven to 350. Lightly spray 13 x9 inch pan with no stick cooking spray. In large bowl, combine cake mix, 1 cup peanut butter, water and egg on low speed. Mix 2 minutes on medium speed. Spread into prepared pan.

Bake at 350 for 20 to 30 minutes or until puffed and light golden brown, cool completely.
In small bowl blend frosting with 1/2 cup peanut butter and spread over cooled bars.
top with mm's

Fudge

Fudge

3 cups sugar
3/4 cup butter
1 small can 5 oz or 2/3 cup evaporated milk
1 pkg chocolate chips
1 jar (7 oz) marshmallow creme
1 tsp vanilla
1 cup nuts, chopped (optional)

Heat sugar, butter and evaporated milk to full rolling boil in 3 quart heavy saucepan on medium heat, stirring constantly. Boil on medium heat until can form a soft ball in a cup of cold water. Remove from heat. Stir in chocolate chips and marshmallow creme until melted; stir in vanilla and nuts.
Spread immediately in foil lined 9 inch square pan. Cool at room temperature at least 4 hours. Cut into squares, store in airtight container, makes about 3 lbs.

Oreo Truffles

Oreo Truffles

1 (8 oz) Cream Cheese
1 pk oreo cookies
1 pk Chocolate Almond Bark
1 Pk White Chocolate Chips

Cumble up the cookies and mix with cream cheese. Form into 1 inch balls let chill for 20 minutes while you melt the chocolate almond bark. Dip in chocolate almond bark and place on wax paper. Let harden and melt about 1/3 bag of white chocolate chips and drizzle over the top of the truffles.

I let my 4 year old granddaughter help mix the cookies and cream cheese. She has a great time doing this, and it gives the two of us time in the kitchen together.

Cheese Ball

2 (8 oz.) cream cheese
1 Jar dried beef (chopped)
3 green onions chopped
2 tablespoons worcestershire sauce
2 teaspoons accent
1 small can  chopped olives (optional)

Mex well and form into ball and chill. So easy. I sometimes chop pecans and put into it.

Friday afternoon I took some Senior Pictures of Clint. As you can tell he has one of the sweetest smiles. He is a great guy and I hope he enjoy his senior year and Life after High School.

Lemonade Pie

Lemonade Pie

1 can sweetened condensed milk
half a can frozen lemonade, thawed
1 tub cool whip
1 graham cracker pie shell

Blend milk, lemonade, cool whip and pour into pie shell.
refrigerate serveral hours.

I make this the night before serving.

Easy Coconut Cream Pie

Easy Coconut Cream Pie

2 cups cold milk
2 pkgs (4 serving size each) jello vanilla instant pudding
1 1/2 cup coconut
1 tub cool whipped topping
1 graham cracker pie crust

Pour milk into large bowl, add pudding mix and mix well. Add 1/2 cool whip and mix well, add coconut, and mix well. Pour into crust. refrigerate 4 hours or until set. Add the rest of the cool whip on top and roast and little coconut and put on top.

Butterfinger Pie

6 (2 1/8 oz) butterfinger candy bars, crushed
1 (8 oz) package cream cheese
1 (12 oz) carton cool whip
1 graham cracker crust

Mix first three ingredients together. Put in the pie crust, chill, and serve.
Sooooo easy

Fluffy Pumpkin Cheesecake

Fluffy Pumpkin Cheesecake

1 graham cracker pie crust
1 pkg (12 oz) cream cheese softened
1/2 cup sugar
1 1/2 teaspoon pumkin pie spice
1 cup 100% pure pumpkin
2 eggs

Mix cream cheese, sugar and pumpkin spice on medium speed.
Stir in Pumpkin add eggs and mix until blended. Pour into crust.

Bake at 350 for 40 minutes. cool. refrigerate for 3 hours or overnight

Chocolate Pie

2 cups cold milk
2 pkgs (4 serving size) jello chocolate instant pudding
1 tub cool whip
1 graham cracker pie crust

Pour milk into large bowl. Add dry pudding mix well add 1/2 tub cool whip.
Let set in ice box about 2 hours. Top with the rest of the cool whip. Add some
chocolate shavings.

My family just loves this recipe. I think sometimes they could eat this every week.

Strawberry Jello Pie

Strawberry Jello Pie

1 box strawberry jello
1 cup sugar
dash of salt
3 tablespoons corn starch
1 1/4 cups boiling water
1 cup of sliced strawberries (or frozen, thawed ad drained)

Mix together all but strawberries and bring to boil for 5 minutes. Add 1 cup of sliced
strawberries. Pour into graham cracker pie shell. Let cool until about 2 hours in ice box.
Top with cool whip when jello filling has set firm in crust.

This is a great recipe. My daughter just loves it.

Pecan Pie

Pecan Pie

3 eggs
1 cup white or dark karo
1/4 teaspoon salt
1/2 cup sugar
1 teaspoon vanilla
1/2 stick butter
1 uncooked pie shell

Beat eggs well, add all other ingredients, mix well. Cover botton of pie shell
with pecans (and I always break mine up) and pour mixture over pecans.
Bake at 350 for 50 to 55 minutes.

This recipe is Gary's Grandmothers. She was the best cook I have every Known.
 When she set the table there was so much food, there wasn't much room for
your plate.

Chocolate Covered Peanut Butter Balls

2 cups peanut butter
1 lb powdered sugar
1 stick butter
3 cups rice krispies
Chocolate almond bark

Mix all but the almond bark. Make into small balls. Chill thoroughly.
Melt chocolate almond bark. Dip peanut butter balls in chocolate
and place on wax paper and let cool. These are great. My family just
loves them.
