Poppy Seed Chicken Casserole


Poppy Seed Chicken Casserole

5 or 6 skinless, boneless chicken breast halves
2/3 cup butter, melter
1 1/4 sleeves buttery round crackers, crushed
1 1/4 teaspoons poppy seeds, or more if desired
1  (8 oz) containers sour cream
1 1/4 (10.75 oz) cans condensed cream of chicken soup
2 -2/3 cups shredded cheddar cheese

Boil chicken breast halves until the chicken breast are no longer pink in the center. drain the water, then shred the chicken (I did not shred mine I just chunked it up).

Preheat an oven to 350.  Combine the butter, crackers and poppy seeds in a bowl, set aside.

Blend the sour cream and cream of chicken soup in a bowl, pour half of the soup mixture into a 9x9 inch baking dish. Add the shredded chicken, then pour the remaining half of the soup mixture on top. sprinkle with cheddar cheese, then top with the cracker mixture.

Bake in the preheated oven until cheese has melted and the sauce is bubbly. 25 to 30 minutes.

Serves 8

I tried this recipe over the weekend and it was a success.  It's simple ,easy  and good just the way I like it.

Jackie's Cucumber Dip

Jackie's Cucumber Dip

1 cucumber
2 (8oz) cream cheese
1 pkg Ranch Dip Mix
2 Tablespoons Mayo

slice cucumber and chop very fine (I put it in my mini chopper and that works great for me)
now set aside.

Put cream cheese in bowl and cream with mixer add Ranch mix and mayo and chopped cucumber mix all very well. Now it's ready for dipping.
I use tortilla chips but veggies would be great too.

I got this recipe from my daughter (Jackie). She is like her mother and like to trying new recipes. I took this to work and it was gone by Lunch

Amish Cake

I got this recipe from my friend Terri Ryan and it is so easy.



Amish Cake
1 yellow cake mix
3 eggs
1 apple pie filling

Mix all together and bake in a 9x13 cake pan at 350 until done

You can mix this cake up a bit if you want by using a spice cake or by using a peach pie filling.
This cake is so moist and yummy

Cherry Bundt Cake

Cherry Bundt Cake

1 yellow cake mix
1- 10 oz jar maraschino cherries
1 cup oil
3 eggs
1 tsp vanilla
3 drops red food coloring (opational)

finely chop  the cherries  then add cherries and juice (all but about 1/4 teaspoon) to cake mix, add oil, eggs, and vanilla and red food coloring. Bake in bundt pan at 350 until done.

I used about 1/4  teaspoon of the cherry juice with powder sugar for the icing

This cake is really good. I didn't have a recipe for this cake so I just started putting ingredients in and it turned out great. Who Knew!
