Main Dishes

Easy Potato Casserole

1 pkg frozen cubed hash brown potatoes (32 oz)
8 ounces mild cheddar cheese shredded
1 can cream of chicken soup
8 ounces sour cream
1/4 cup finely diced onions
salt
pepper
1 cup crushed cornflakes

Preheat oven to 400 degrees. In a large bowl, mix together frozen hash browns, cheese, soup, sour cream, onions, and salt and pepper to taste. Spoon into an 11x13 inch baking dish; top with crushed cornflakes. Cover with aluminum foil; bake for 45 to 60 minutes or until bubbly at 350.
